Peach, Parma Ham and Torn Mozzarella Salad

With peaches in season, you can’t go wrong with a lovely, classic peach, Parma ham and torn mozzarella salad. It is fresh, it is sweet, it is salty, and paired with a bit of warmed ciabatta – it is one of my favourite salads. Enjoy!

Serves 1

1 ripe peach (I used Red Blush variety)
5 slices Parma Ham
50 grams fresh mozzarella, torn up
1 TBSP extra virgin olive oil
Freshly Ground Black Pepper
Few Mint Leaves
Pinch of Maldon Sea Salt

Well there really isn’t that much to this salad – just simply slice the peach, place on a medium size plate, and top off with the rest of the ingredients. You can make it look all ‘fancy’ by carefully layering the parma ham and mozzarella, but to be honest, this salad tastes so good, you won’t have any time to really take in its beauty. Mainly because you’ll be stuffing your face! 😉
